Why not an old-school "course work", you can also call it a project report? The trainees put together those sketches, plans, photos, etc. in to a report, in an office program or other document creation program. If it need to be maintained over a long period of time, the trainee is required to upload the report as the work progresses. You define milestones intervals where the work will be assessed in continuous assessment style. That would most likely be the often used Assignment activity.

Well, the final format will most likely be PDF. If you want HTML, you can take the Journal module or the Diary or a Wiki activity. Or even you can ask them to write a Blogs.

No effect at all! It is the server FQDN in the HTTP requests that tells the *web server* where to go.

You can organize courses with sections, sub-sections and sub-sub-sections with the https://moodle.org/plugins/format_multitopic plug-in. Worked brilliantly for a full one year course!
