Hello there. There is a page Moodle manuals to which you are welcome to add any Arabic documentation you write; there are already resources in other languages there. A link was recently added to Google drive documentation in Hungarian for example.

Can you do a screenshot of the previous lesson activity completion settings and the restrict access settings of the current quiz? And can you confirm the quiz is not actually hidden (ie manually by clicking the hide icon)?

Do you mean on the front page of the Moodle site? You could use the topic section and add graphics to represent each category and link each graphic to its corresponding category. You don't need HTML or CSS for that.
