I have a Moodle instance up that I am running a few summer school courses.
I was tweaking the gradebook to stop counting future assignments in the grade and now it appears it isn't computing a course grade at all.

Any thoughts?

This is a scheenshot of your full Grader Report. To help you, we would need to see Categories and Items interface. You can navigate there from Choose an action... menu.
Overall, please check what is the Aggregation method do you use to calculate course total. You may try this:
- switch it to SUM
- if it is set to Simple Weighted Mean - make sure that individual grade items are not marked as extra credits
- if it is set to Weighted Mean - make sure that grade items do not have a weight of 0
