Re the first one, could you or she not simply delete the blog entry? Having first copied the text if it is important and then paste the text into a new entry?(You can physically delete the image if you have ftp access to your server - in the directory moodledata>blog but that's not always possible.)

Had you been altering anything in addition to installing? Had you added any extra plugins? Have you tweaked the theme? Have you tried completely deleting the welcome message and retyping? If you go into courses and try adding blocks or editing text,do you get this then?
