I dont want to allow visitors to sign in in my moddle, how can I delete that part from the main login page?

I think if you go into admin and set authentication options to manual accounts only that should achieve what you want.

I have already chosen no Authentification, but what I would like to do is to be able to edit the text shown in that page to adapt it to my needs

Under the Login directory there is an HTML page called login_form.html. You could edit that to prevent people from logging in, or to change the language of that page, go to the Admin section of you site, and click on Language, then click Compare and edit current language. The language files need to be writable by the server.
