On occasion, our staff have accidentally deleted Moodle Assignments and quizzes which have student attempts. Currently when we restore these activities the student attempts are not restored. Are there any plans on the roadmap to bring that feature in?

Please see the documentation Recycle bin. From what I understand, from Site administration > Courses > Automated backups > Automated backup settings and from Site administration > Courses > General restore defaults, you need to have Include Users checked.

With testing deleting and restoring activities, such as Moodle assignments and quizzes, the students submissions and attempts with the settings above are also restored. This will save a few tears.
