Is the any way using answer tables template in questions? 

One of the assessment requires the filling the tables. Answer would be vary from students. The teacher would mark by manually grade answers. (Here is example templates.)


 We tried to insert html table in Response template in essay questions but student can able to edit or delete predefined the tables during the answers, also we tried to use Embedded answers (Cloze) but cloze question type requires the specific correct answers. 

Please share us your experiences and give advice for this situation.

Since Moodle now supports H5P content, check out the 'Fill in the blanks' and the 'Advanced fill in the blanks' types on H5P ?

IIRC, the 'advanced fill in the blanks' even supports multiple correct answers - i.e. if Black, Brown, Blue, Grey, Red, White... are all correct answers, all of them can be set up as such.

If the forms are built like tables, that should work for your requirement ?

Use the Cloze question. Give a bogus value, such as "h4is82h******..." or whatever students can't guess, as the correct answer so that students get 0, that is, until the teacher marks the quizzes and adjusts the grades.

Adjust the width of the input boxes with the number of stars. The question text should look like this:

    </tr>
