I understood that was 2 minutes. If I could change that to 30 minutes, I would be set with our current settings. We do need deferred feedback (this is a proctored exam); but would like people to be able to review for 30 minutes instead of 2 minutes or indefinitely while quiz is open.
Does the option for 30 minutes only show up with certain things checked? Or is it a newer version than what we are using?
The original exam was likely set up in a version of 2.xxx.

I'm sorry for not being clear. The option I showed does not exist, it's just a model. Developers sometimes complain that user requests are not sufficiently explained. I should have said: "Here's what you can ask a developer to create for you", hoping this model clarifies your request.
I think it would be a good addition to the quiz settings in general. At first glance, it does not seem too difficult to do, but only a developer can tell.
Thank you. One last question --- is this something a developer could create for our own particular site; or is it something that somehow could get recommended for an update to Moodle itself?
I will try to answer your question, even if it starts to go beyond my knowledge. I think the modification may not be difficult, but I really do not know for sure.
Ideally, Tim Hunt would simply say: "Change 120000 (2 minutes in milliseconds) to 1800000 (30 minutes in milliseconds) on line xx of file yy."
If this does not happen, the best you can do is to do it yourself for your own site. Be warned, it seems that the code of Moodle is complex. You will surely need the services of a good computer specialist.
The last option is to propose that the main Moodle program be modified to integrate this function. In my humble opinion, unless there is a strong demand, it can take a very long time before that happens.
I wanted to create a Tracker on this issue and took a closer look at the "Display options". These options are actually somewhat restrictive and may not behave as expected if you are not careful. Here are some quick observations. I did not check the behavior of the quiz for all possible combinations of options and further investigation should be conducted.
- In "Review Options", a quiz is considered closed only if it has a 'Close the quiz' date. If the questionnaire has only a "Time limit", the review options do not apply and the quiz remains indefinitely open for review.
- If a student finishes his quiz at the closing time, he will not be able to review his attempt, not even for 2 minutes, because 'Immediately after the attempt' and 'Later, while the quiz is still open' are exhausted at closing.
In order to add a little more flexibility in the review options, here is what I propose:
- Allow a specified time to be set for the default "Immediately after the attempt" value of 2 min (as in my post above).
- Allow the "Immediately after the attempt" time to exceed the closing date, unless 'Later, while the quiz is still open' is set.
- Allow a specified time to be set for the default "After closing the quiz" infinite value.
- Note that if points 2 and 3 are set, they will overlap, but without consequence.
- Place a counter for the time left to review.
- Consider the 'Time limit' reached as a closed quiz.

Another workaround I considered was being able to restrict the entire quiz "topic" with a proctor code. But I see I would only be able to set that for the quiz attempt. It would have "policed" our exams to at least have the proctor involved allowing access to review when a proctor was also present and not at any time. Then it could also allow for a student who would maybe need more review time, that option with their proctor. Also get the proctor involved in the process of review.
Any ideas along those lines?

I hope your post will at least draw the attention of Moodle developers to the fact that the "Display options" have serious shortcomings.
Further observations:
- If a quiz does not have a closing date, it is not possible to define a time-limited review other than 2 minutes.
- If a quiz has a closing date, it is not possible to wait until the exam is closed before allowing a time-limited review, which would be a good practice to ensure academic integrity.
I do not do remote proctoring, so I'm not very familiar with that. But it's certainly a good idea.
