Someone knows if new moodle versions are using captcha v2? since which version?

This question in a Moodle Doc will give you a start on how you can enable CAPTCHA. But my understanding is that more sophisticated tools are consistently breaking Captcha these days... might want to consider something else, like a JS question that requires a considered response.
It's going to be in the next update available later this month - supposedly. Presumably the tracker is this one: MDL-48501
