I post this here because I could not reply to a post in an old discussion about the same subject (error: no permission). So this is actually not a question but an observation that might help others too:
To delete an aspect (evaluation criterion), one has to switch to code (<>) in the description fiels because there might be some code you can either see nor delete otherwise. Once everything is deleted, Moodle automatically removes the aspect.

I must only add that this behaviour has not been intended as a final one. I was hoping to have a small button or checkbox to delete criteria explicitly but it (as well as many other little and big features) just did not happen yet.
Really good piece of information regarding remove aspects in Workshop assessment form / Workshop evaluation form have this page. A lot of people including me want to remove but don't have proper idea to do this task. So, Now finally i got this one which i felt helpful for me.
