Is it possible to rename the Courses in moodle to something else? Ex : Practices.
Like this, can we edit some of the metadata of moodle if we want to use it for slightly different domain than education?
Has any one used it?

Feasible but little bit painful : you need to replace all strings (Course but probably also related ones like Teacher, Student, ...) using the Language tool in site admin.
We did it for a Community of Practice platform project.
