Is there any way to auto schedule a quiz after completion? If my activity or my course completes today then moodle should auto schedule it to next given date.

This is not possible with the standard Moodle, but might be done with a custom quiz access rule plugin. I am not exactly sure under what conditions you want change dates. Are you using course or activity completion or are you talking simply talking about the quiz due? (i.e. Do you want the quiz open one day a month etc.)

Instead of auto-scheduling on the next day (and then again on the next), why not leave the quiz date "open" so that it can be down at anytime (meaning no due date at all?)
