I've got the initial setup done and we have a lot of coursework and assignments in, but I'm having a little difficulty grasping the Moodle way of doing some of these things.

What we're wanting to do is:

1. Have coursework setup so there are completion criteria (whether it's you can't go to one course before another or whatever it may be for that particular course/activity) that fire email notifications to a supervisor. I'm a little confused as to how to accomplish this. I thought I had it setup properly on my dev box and ran the admin/cron.php manually to see if it would generate the badges. It hit that point and I got an SMTP error sending (said the connect failed) and I found a reference to people having notorious problems with phpmailer. I'm wondering if this particular issue isn't related to this, but I know no other way than to finish it and force the badge notification to be run.

2. Setup supervisors who can log in and just be able to view the student's progress and receive notifications of the student's completions (course and/or activity). I have a supervisor role setup based on a sample "parent" role video I found but I think the grading of the course/activity may be the issue. Is there a way to setup grading so it's more automatic and then when the student completes that course/activity the grade reflects it right away? That way the supervisor can see current progress.

3. Grading - is there a way or how do you setup more of an automatic grading system for courses/activities?

Hello Chris and welcome smile You seem to have three separate issues here so it might be better if you post (1) the course/activity completion one and (2) the  supervisors one again separately and I will begin by suggesting an answer to the third one, the grading one. It's probably more helpful for people to ask one question per post so they can focus on responding to the query they understand best.

in terms of setting up an automatic grading system, you could make use of the Quiz Other grading such as with assignments really does need to be done manually but there is a lot the quiz module has to offer.
