There only appears to be the option to get email notifications of "all" posts and replies to a forum. Is there a way for a user to only get replies to their post?

That's right. At the moment, we can not only get replies to only our post through email, but the whole forum the post belong to.
I think Moodle forums should have an extra option to get the email notification only from one's post.

No, because collaborative learning (which Moodle promotes) is not just about getting answers to your own question.
