Is it possible to allow the student to unenroll themselves only an specific course, without affecting all courses?

I followed the instructions, but when I enter the Override Permissions tab, there's no moodle/role:unassignself option, only moodle/block:view.
What could it be?

Hi Johnny - where are you entering this Override permissions tab? Your options suggests you are clicking on a block rather than going into the "assign roles" link of the course administration block and then clicking the "override permissions" tab of student there. Are you sure you didn't click on the "assign roles" link of the course administration block by error? Do you have admin access ? If not then you won't (normally) be able to override permissions.

Yes, I have admin access. However, I'm having trouble to find the "Assign roles" link. Is it inside the course page that I'm trying to modify?

Yes 
Go inside your course. On the left (usually) is a block Administration. In there is a link assign roles - click on that and at the top you will have the tab Override permissions. Follow the instructions as Helen posted then for individual course unenrolment.
