What will happen if I Update Quiz while it is attempted by 100 user.?
Or I edit question like if error found while attempting ?

I don't think moodle will allow you to add or delete questions from a quiz when there are already attempts on record. It will allow you to edit individual questions, but if you do this you should be sure to "regrade" the quizzes after the quiz closes so that the attempts on record are scored properly.
