The current workaround: modify the dates first, then add the Progress Bar block.
You should try the "lock to due date" setting, which causes the block to follow activity due dates instead of manual dates. This should be on by default for activities with due dates. It doesn't work with completion "expected by" dates, though.
There's not a limit, but with large courses, the block instance config form can be slow, can stall or fail. The main reason I've identified is the little calendar widget on each date and there is a tracker issue for that. Decencies between form items also slow things down.
This was one of the reasons why I've been working on a new version of the plugin that relies on completion. I've submitted that to the Plugins directory and hopefully it will be approved soon.
I cannot determine what is causing some students to show red and others blue on the same assignment, though I think the bug has to do with the "Action: Passed" setting, as when I set it to Action: Submitted, the colors worked correctly. Here's some info on the assignment:
Progress Bar settings:
-Monitored: Yes
-Locked to Deadline: Yes
-Action: Passed
-Show submitted before action: Yes
Assignment settings:
-Deadline: June 30, 2017
-Attempts reopened: Automatically until pass
-Maximum attempts: Unlimited
Some students that have no submission at all show red and blue. Some that have reopened assignments also show red and blue. I can't find any patterns.
I haven't had a chance to look at the code in relation to what you reported. It could be related to assignment attempts or overrides in the Gradebook.

To add an activity completion option, you
would have to change the Forum module. I'm not sure if that is what you meant.
It could be done by adding an action query to the Progress Bar, but that would be hard to configure.
With the "lock to deadline" option, the dates set in the Progress Bar block instance configuration page and rely on the date set with the activity instead. You should be able to test this after you save the configuration with "lock to deadline" on and view the Progress Bar block in the course. If you had set a date previously and the chosen "lock to deadline" that date is remembered and appears greyed out, as you described, but it would not be the date used unless you turn off "locked to deadline" again. At least, that's the way it should be working. Let me know if it is not.
I'm trying to use this plugin but I'm having some problems. Do I need to configure the progress bar each time I add a new task? I want to include de progress bar as a standard in all the courses.
Yes, you do need to adjust the configuration after adding new activities if you want them to appear in the Progress Bar block. You can add the block globally, but each instance needs to be configured.

I was wondering whether it would be possible to add "alt" text (modifiable through Language packs) to "tick" and "cross" icons for better accessibility in future versions?
