In one course or all courses?

Is there video in these courses?  Are you the only person teaching those courses?  Do you use plugins that other people don't use?  Does your site have blocks on youtube for example?   Have you tried turning debugging on?

You are going to need to give us a whole lot more information. Moodle version to start with. Screenshots of a working assignment settings page and a non working settings page. How your course is set up in relation to groups. Who can't see the students? Teacher/admin/anyone?
