As you mentioned, there new capability enrol/self-enrol which is designed to do what you want. Is it definitely not possible for you to get your site upgraded from 3.5?

There is a special role which can be given to parents allowing them to see their child's work and activities but not be enrolled in a course or see other people. See Parent role

Agreee with Richard, but just to point out that if the assignment submission text is not so long, they don't have to upload a document at all - they can type directly into Moodle (and you can comment within their text).

Quelle est la valeur sous "Défaut" ? It faut sélectionner "compétent".
