Please see Building Quiz and remember that if user have already taken your quiz, you cannot then add questions to it.

Yes Jason -please add your findings to the documentation page for other to benefit Note that http://docs.moodle.org/en/Conditional_user_fields does already say that not all fields are included, but perhaps we need to specify more clearly regarding custom profile fields which one's are not.
Who is running your Moodle? You need to ask the person or people who are in charge of the Moodle you plan to use for your summer course, because as an authenticated user you cant do much, and you need to have at least a teacher role to add materials to courses. On this Moodle for example you will just be an authenticated user and a student in the course where these forums are;that's because this Moodle is a site for discussing Moodle and not for teachers to design courses, but on the Moodle you will be using for your own summer course you should be able to get at least teacher rights.
