- you really need it to run every minute. I usually have something */2 to */5 in place of the first *.
- don't hide nor make the log to go to a file (can www-data write in /var/log/apache2?), rather leave it at its default behaviour. cron will write to www-data's mailbox

Yep, a diagram wouldn't be a bad idea, yours is a complicated setup. At this level of detail the language is going to be an issue. Try letting Google Translator do the first translation and then making manual corrections. Alternatively, Moodle has a strong Spanish community, you could talk to them.
