On frontpage I wish to change the heading "Course Categories" , that appears in box header above the list of categories, to something else, say, "Teaching Faculties". How do we do it?

By editing the current language. However, I recommend leaving the lang/en folder alone as it's the default language.
Instead, copy it to a new folder (eg lang/en_ac) and edit that. This method will also make it easy when you upgrade Moodle later (just retain your "local" language file).
