I actually just have a simple question... You know the sessions directory in the moodledata directory? It takes forever to backup, copy, etc. Are the sessions in there necessary to keep when (for example) upgrading or moving the site? Or can I just delete them regularly? I can't seem to find any info on this anywhere.

Hi Mosa,
the sessions folder holds small data files for each for each student that is currently logged in. If you delete it, everyone who is currently logged in, will suddenly find themselves logged out. Usually this is not what you want.
On the other hand, you don't need to back it up.
In short: don't delete it, but don't back it up
