I find having a username associated with the last post date/time stamp to be very useful on other forums such as the Invision Power Board. It makes it a lot easier at a glance without going into a thread to see if you or someone else was the last to have posted. Who remembers times?  

I see that Recent Activity on the main forums page does list the last x posts and that is helpful but what I'd like is to see last poster even if it was days ago. Has this been done before? It shouldn't be to hard to implement. I'll take a look at it soon if it hasn't been done yet.

e.g.  http://forums.invisionpower.com/  + http://forums.invisionpower.com/index.php?showforum=186

Also, adding alternate row colors and or table borders like in the Invision example links above would also greatly help readability. This might already be included somewhere as I'm just getting started with Moodle.

Additionally, adding in a views would add whether anyone has viewed the topic and not just count replies. This may be more difficult to add but is helpful to see if anyone is paying attention.

I too have missed the "Last post by" column. Please make it look like the "Started by" column, i.e., include the picture, Moodle style.

Counting the views is a tempting idea but unfortunately impossible for forums that send out emails. There is no way practical way to determine whether someone read their email carefully.
