Has anyone created a self paced class where students can join at anytime and follow the topics? Assignments would be given but no forums would be used. I am wondering if the assignments can be emailed so I dont have to keep checking to see if someone is taking the class do you understand what I am saying? Im sick and on cold medicine so forgive me if it doesnt make sense! If anyone has something like this set up could I gain access to see how you did it? Thanks!!!

You are welcome to look at www.remote-learner.net/insight. Create a user account and I will e-mail you an "enrollment key," when you notify me account is set up (bryan@remote-learner.net). This course is self-paced with open enrollment, but includes forums. Basically doing as Tom suggests with assignment due dates.
You could force subscription to a single forum and then post whenever you have a new assignment ready. I Suppose you could have students e-mail you their assignments when complete, but there would be no tracking them in Moodle with this scenario. Perhaps if you explained the social constructionist framework of Moodle to your students (i.e., connected learner vs. separate learner benefits), they would enjoy their experience a bit more.
