BBB meetings work more like rooms which are open until the teacher schedules them to be closed than instances that repeat at set times.
So to answer your question, there is no straightforward way to do it. There are workarounds that might work for you, depending on what you want to accomplish e.g. one BBB activity that has an open and closing time that is edited every week

An idea, works only if the teacher has an account on the BBB server, not going through the Moodle BBB plug-in.
- Visit bbbserver/rooms and reate a new "room" on the BBB server and start it. You'll get a link like bbbserver/rooms/xxx-xxx-xx-xxx/join and an access code.

- On Moodle create a URL resource for that link. You can put the access code in its description.
- Use the availability options Moodle offers to limit the access to what you want.
Of course if you give the access code in the description, the student can go there any time - and meet others! You have to judge whether that is OK with your audience. Otherwise, there must be ways of rotating the access code, etc.
