Hello,
As you've noticed, you have a print option for your book, which you can use to save the book as a pdf file. You can add a download pdf link for students as follows:
- Save the book as a pdf file.
- Edit the book settings and in the description field add a link to the pdf file.
If you wish, you can style the link as a button, as I've done here:

It worked, thanks. Now we want to disable the default print options from book. how can we do that?

You can remove the print options by preventing (or prohibiting) the print book capability from the student role.
