Students entering class at a later date, exempt

We may have many students coming into the class at a later date.

There may be two ways to do this?

If I go in and manually "EXCLUDE" the student from certain assignments, will they still show up on their calendar as being not submitted, late, etc?

Or, if I created a scale like this:

Waiting for Work, Work Submitted, Exempt, Work Approved with a passing score of 2, would that accomplish the same thing and they wouldn't have due dates show up on their calendar?

For Assignments have you played with the setting Relative dates mode? You may need to ask your LMS admin about enabling that setting.
