Hello Moodle Community,
Moodle 3.8.2 here.
I would like to ask if logs and/or reports are generated when manually enrolling students to a course and Moodle sends an email to the student informing him about the enrollment, as specified on the Course enrollment documentation section, be it one by one or in bulk.
If yes, where can I see those logs?

Within your Course Administration block, go to Reports - Logs
(You can also do this at the Site Administration Block level)
Since there will be lots of logs- change your filter to "All Changes" and "Other" to narrow down the results.
You will see it pretty clearly listed as "User enrolled in course"

Though I'm not aware of an email getting sent out to anyone when you Manually enroll a user in a course. the docs you linked don't mention an email. Emails, I think, are restricted to self-enrollment (https://docs.moodle.org/310/en/Self_enrolment#Sending_a_welcome_message_to_new_users) and Flat File enrollment (https://docs.moodle.org/310/en/Flat_file)
