An interesting question on a feature I haven't seen that often. I checked the
Moodle Docs on the Grade Letter tool (
https://docs.moodle.org/39/en/Grade_letters) and found the following:
A teacher does not enable the Letter display of a grade directly in an activity (such as a Quiz or Assignment), but in the gradebook.
Follow these steps:
1. Create your activity as you'd normally do
2. Go to the Grades section > Gradebook Setup
3. Open the Edit menu for the Grade item you'd wish to edit (this can be the course as a whole, or just one grade item)
4. Click 'Show more' to see all the grade item settings for this item and scroll to the bit that says Grade display type, to find a menu with a number of options. Letter is one of a few options, and there are combined ones (percentage + letter, real grade + letter, etc.)
5. Save your settings for the grade item and you're set.
If, however, you'd like this to be the default display type (so your teachers don't have to worry about this being correct), you could do the following as an Admin:
1. Go to site administration > Grades > Grade item settings
2. Change the default value 'Real' to any of the 'Letter' options and save
This way all grades will always show the letter grade, unless a teacher chooses to modify the grade item settings at course level.
