Saving course files for offline use

Hi all,

Just looking for any glaring errors, or alternative suggestions. 

In the past I've tried Moodle on a Stick, but it seems it's quite old now.  From some searching I've found Spoodle as a more up to date local Moodle.  

A few questions:

    i)  Would there be a faster way of backing up the course files and organizing them?

My present plan is to download the course, and upload to a USB offfline Moodle so I can install the courses on this and still access all of my course files.

I run my own small Moodle, about 11GB of data right now.  I regularly move the backups to my computer and use MAMP to work with them, offline.  I am not sure if this would work for you.  But realize that I am moving my entire set of courses in one shot, not individual courses.  This process takes around 15 minutes.
