Is there any way in which I can get an overview/log of all mails being sent by Moodle?

Would it be advisable to use for example an Office 365 account from which Moodle sends the Emails and will they stay in the 'sent items'-box?

We want to build up a record of mails being sent to students. Preferable a report that shows all mails Moodle has sent to student X or Teacher Y.

Any suggestions in how to go about this?

Do you mean the log, to whom mail were sent? On local Postfix it would be /var/log/mail.log.

If you mean the full content of every mail sent to a specific mailbox, check for bcc maps in http://www.postfix.org/postconf.5.html - again Postfix specific.

Nothing to add to this answer, but remember that through the email are sent also the private messages between the users and copying these conversations breaks the user's privacy.
