You can do this, I've done it before. You can create a global feedback form at the site level, and then it is available in all courses (or you can map it to the courses you want to evaluate). It will show up on the course under the Feedback Block, which you might need to add/show.
Then all your data is collected in one form and you can use it in aggregate or sort it by course.
