And(for the future) to get that quiz navigation block look with the journal or assignment modules, you can use the "completion progress" block on the course page. You can have a separate block per week.
If it's a lot of essays, it will be much easier on teachers to grade them using assignment module.. assignments needing grading would appear on the teacher dashboard.
