There's a hiddenuserfields setting in User polices in Site administration where you can select fields to hide from students.
To hide the fields from teachers, you need to make a permissions change. See the section 'Hide user fields' in the documentation User policies for details of the capabilities, and let us know if you need further help in how to change permissions.

I have a similar situation with one site I'm involved in, where all users are in one city. We renamed 'City/Town' to 'Project' or 'Office', which shows more useful information on that screen for us.
You can hide the Country column using custom CSS:
