Can one map groups, groupings and/or cohorts from LDAP?

Not through LDAP but there are plugins available.
I had Mark Ward create the auto groups plugin (https://moodle.org/plugins/pluginversions.php?plugin=local_autogroup) specifically so that I could assign groups upon enrollment. It allows you to create groups from one of a few fields (I use institution which I map from LDAP company field). It works exceptionally well. I have tested through 3.0 and it is still working.

Thanks, Emma. So, the answer to my original question is No. Through LDAP one can enroll users as Teacher or Student in to courses but can not group them in to cohorts, for example?

Correct - there is currently no functionality built into LDAP to add to groups or cohorts.
