Good question Jonas! The roles listed in the dropdown are all roles which can be assigned in the course context. Thus, to get Student listed there, you need to go to Administration > Site administration > Users > Permissions > Define roles and edit the Student role, then for 'Context types where this role may be assigned', tick the Course box. (It is ticked for the default role of Student.)
