I'm creating my 1st feedback resource and I do not have the multiple-choice, multiple answer option available in the drop down list of possibilities.
Is there a setting I am failing to turn on?

Can you post a screenshot? It should be in the dropdown list within the multiple choice question type...
Unfortunately, I can't, but here's what's listed (in order):
Add a page break, Captcha, Information, Label, Longer text answer, Multiple choice, Multiple choice (rated), Numeric answer, Short text answer.

Choose multiple choice- you get the possibility to choose between single or multiple answers in the subsettings (next step)
