Does anyone know of a way to set the Non-editing teacher setting to a specific value for every course in a semester, with one click, rather than having to edit it in each specific course or section? Thanks!!

Can you edit the name of the role in Settings > Site administration > Users > Permissions > Define roles or am I not understanding your question correctly?
