I would like to use a chat box during my office hours, and there are two things I think would make this more useful:
1. If there were a notification (next to the chat activity link) that someone had typed something in the chat area, similar to the one that notifies you when someone has posted to a forum.
2. If this feature were added to Moodle Mobile. I think it's a natural for students to want to use their mobile devices to chat.
