I'm using Moodle 1.9. I have a situation with the class I'm teaching that requires me to change the text format for quiz answers. Would anyone be able to point me to the file where the text format (i.e. FORMAT_MOODLE, FORMAT_HTML, FORMAT_PLAIN, etc.) is set for quiz essay answers, so I can change it?

This will show you that even in 2,0 this is not already available.
However you could put HTML code in multiple choice answers (even images).
There are other issues on this forum about this more or less hacking procedure.
