Is it possible and if so how do I change the actual name "Category" to something else. On the front page we would like a term other than "Category" to describe the courses found in each "Category".

Well you can change Moodle words via site admin>language>language editing>edit words and phrases and choosing the file you want from the dropdown -it is usually moodle.php. But beware - if you change it then it changes for everywhere on Moodle so if you changed it for your front page it would change other instances too.
