If you want to do this in just one course you can do it in the course administration>settings. If you want to do it for the whole of your Moodle you do it in site admin>users>permissions>define roles

In Site Administration Block
Click on Users-> Permissions -> Define roles and edit the "student role" and change it as a employee.
I think it will help.
