Hide Courses From One Student But Not Another. How?

I want to create two student roles which are exactly the same except for the fact that I want one role to see the complete list of courses whilst the second role only sees a select list of courses. In other words, how do I hide certain courses based on a user's role? Thank you.

We are looking to use cohorts in moodle 2 to accomplish this.  It will need a change to the self enrollment plugin, or a new plugin.
