Hello,
It is actually up to you - if you will not remove your old participants, or if will not hide the course, then they will not loose access to the activities and grades.
If I were you, I would create a new course for the new participants, and then Import content from the old course.
Then you can run them separately and decide what kind of access students need in the old course.
