hm, have not encountered anything like that 
I have had this happen several times in the last couple of days. I have to go back into setup and save it. After that the intended label sticks.
But this is very frustrating when trying to make a formula.

Can you please tell your exact Moodle version?
I can try to test and then submit a bug to developers.
p.s. I still think that that our custom tweak can make UI friendlier (which we would love to share - though it is indeed very simple. It's just UI preferences, I guess)
