Reuben, It's my experience that a student must be enrolled in a course for you to be able to view those assignments. Once they unenroll (either through the enrollment expiration period or by manual unenrollment) their work will dissappear from the grade book and assignments submission area.
On the flip side, student work and grades are captured so if they are re-enrolled there work is saved.
