How do we take away admin roles for someone who has left our company? We just want to keep them in our database with only student access, but I can't seem to find a way to remove the admin roles.

Go to site administration>users>permissions>assign system roles and you should see them there in the admin section. Remove them. They will still be on your system but no longer with admin access.
