The student's Activity Report (clicked from their profile page) displays different information depending on the course settings for "Show activity reports".

If you set "Show activity reports" to 'Yes' the screen will display their individual activity report with hidden course items not displayed.
If you set "Show activity reports" to 'No' the student sees their User Report which is based on the gradebook so will only hide hidden gradebook items. You are able to have hidden course items display in the course gradebook so if you want to hide the gradebook items click the show/hide eye icon next to the relevant activity via Grades > Categories and items.
