Is there any way in Moodle to show a student which resources he/she has completed - by say a 'checkmark' or something appearing next to the name of what they have already looked at/completed?

Not for all resources unless you use the Activity Locking hack.
But if you put your content in SCORM format, then you can set various completion results for each section of content.

Could you possibly expand a little on the SCORM format possibilities...
For example... with SCORM could I put having just accessed (and therefore read) a resource as a completion requirement? And also, with this, is there any way to visually communicate to the student that they have completed something? For example, there is a big list of resources, and a checkmark appears next to the ones that they have read?
